You Will Need

  • Hand mixer
  • 2 mixing bowls
  • Mixing spoon
  • Measuring spoons and cups
  • 9 x 5 in loaf pan
  • Parchment paper to line pan (optional)
  • Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 3/4 tsp salt
  • 2 large eggs, room temperature
  • 1 cup canned pureed pumpkin
  • 1/2 cup canola oil
  • 1/2 cup water
  • 1/2 cup chopped walnuts

  • Instructions

    1. Preheat oven to 350°F. Place flour, sugar, baking soda, spices, and salt in a mixing bowl and stir to combine. In a second bowl, beat eggs, pumpkin, oil, and water with a hand mixer until fully combined.

       

    2. Make a well in dry ingredients. Pour in wet ingredients and mix with a wooden spoon until just combined (be careful not to overmix) and then fold in walnuts. Pour batter into greased and/or lined loaf pan.

       

    3. Bake for 65-70 minutes or until a toothpick inserted in the center comes out clean. Remove from heat and let cool in the pan for 15 minutes, then turn out onto a rack to cool completely.
